Mediterranean Chicken Piccata with Couscous

A delicious Mediterranean twist on classic chicken piccata, served over fluffy couscous and accompanied by a refreshing couscous salad. This dish is bursting with flavors

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup all-purpose flour
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 2 tablespoons fresh parsley, chopped
  • 1 cup couscous
  • 1 1/4 cups water
  • 1/4 teaspoon salt
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped red onion
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons feta cheese, crumbled

Instructions:

Add salt and black pepper to the chicken breasts

Coat the chicken breasts in flour and then shake off the extra

Warm the olive oil in a big pan over medium-high heat

Put in the chicken breasts and cook for four to five minutes on each side, or until they are golden brown and fully cooked

Take it out of the pan and set it aside

Put minced garlic in the same pan and cook for one minute

Add the capers, lemon juice, and chicken broth

Bring to a simmer and cook for two to three minutes, until the sauce is a little thinner

Put the chicken breasts back in the pan and let them cook in the sauce for two more minutes

Add some chopped fresh parsley on top

While the chicken is cooking, follow the directions on the package to make the couscous

Once its done, use a fork to fluff it up

To make a Mediterranean couscous salad, put chopped red onion, chopped cucumber, chopped fresh mint, and crumbled feta cheese in a different bowl

Put the Mediterranean Chicken Piccata on top of the couscous and sprinkle the couscous salad on top of that
