Ingredients:
- 200g udon noodles
- 1 tablespoon vegetable oil
- 1/2 onion, thinly sliced
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 200g tofu, cubed
- 2 tablespoons soy sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon red pepper flakes
- 1 cup vegetable broth
- 2 green onions, chopped
- 1 lime, wedged
Instructions:
Udon noodles should be prepared as directed on the package, drained, and then set aside
Vegetable oil should be heated over medium-high heat in a large wok or pan
Stir-fry the onion slices and minced garlic for two minutes, or until the onions become translucent and fragrant
Cook the tofu cubes for 34 minutes, or until they begin to brown
Stir-fry the red bell pepper and carrot slices for an additional three to four minutes, or until the vegetables begin to soften
Combine the red pepper flakes, sesame oil, sriracha sauce, and soy sauce in a small bowl
After adding the sauce mixture to the stir-fry, toss to evenly coat all of the ingredients
After the udon noodles are cooked, add the vegetable broth to the wok and stir-fry for a further two to three minutes, or until everything is heated through and well combined
Add some chopped green onions and a wedge of lime for squeezing over the hot, spicy udon noodle stir-fry
