Braised Short Ribs with Cheesy Grits

Beef short ribs are braised in a rich sauce until they are tender and juicy. They are then served over creamy, cheesy grits. This hearty dish is great for a dinner that makes you feel good.

Ingredients:

  • 4 lbs beef short ribs
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 1 tbsp Worcestershire sauce
  • 1 bay leaf
  • 1 cup stone-ground grits
  • 2 cups water
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter

Instructions:

Preheat the oven to 350F 175C

Season the short ribs with salt and black pepper

Heat olive oil in a large Dutch oven over medium-high heat

Sear the short ribs until browned on all sides, about 3-4 minutes per side

Remove the short ribs and set aside

Add diced onion, carrots, celery, and minced garlic to the Dutch oven

Cook until vegetables are softened, about 5 minutes

Return the short ribs to the Dutch oven

Pour in beef broth, red wine, Worcestershire sauce, and add bay leaf

Bring to a simmer, then cover and transfer to the preheated oven

Braise in the oven for 2

5 to 3 hours, or until the meat is tender and falling off the bones

In the meantime, prepare the cheesy grits

In a medium saucepan, bring water and milk to a boil

Gradually whisk in the grits, reduce heat to low, and simmer until thickened, stirring occasionally, about 20-25 minutes

Stir in shredded cheddar cheese and butter until melted and creamy

Season the cheesy grits with salt and black pepper to taste

Serve the braised short ribs over the cheesy grits

Garnish with fresh herbs if desired
