Ingredients:
- 2 cans 15 oz each chickpeas, drained and rinsed
- 2 cups fresh spinach, chopped
- 1/2 cup gluten-free breadcrumbs
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- Gluten-free burger buns
- Toppings of your choice lettuce, tomato, avocado, etc
Instructions:
In a food processor, combine chickpeas, spinach, breadcrumbs, red onion, garlic, cumin, paprika, salt, and pepper
Blend until a coarse mixture forms
Transfer the mixture to a bowl and fold in chopped cilantro
Divide the mixture into equal portions and shape them into burger patties
Preheat the grill to medium heat
Brush each burger patty with olive oil and place them on the grill
Grill for 4-5 minutes per side, or until the burgers develop a golden crust
Toast gluten-free burger buns on the grill for 1-2 minutes
Assemble burgers with your favorite toppings on the toasted buns
