Ingredients:
- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 large egg
- 2 cups all-purpose flour
- 2 teaspoons baking powder

- 1/2 teaspoon ground nutmeg

Instructions:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
In a large bowl, mix together the pumpkin puree, sugar, vegetable oil, and egg until well combined
In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt
Gradually add the dry ingredients to the pumpkin mixture, stirring until a soft dough forms
Stir in the vanilla extract and chocolate chips
Drop spoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie
Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
