Ingredients:
- 2 cups crushed Oreo cookies
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
- 2 cups whipped cream
- Lemon slices and additional Oreo crumbs for garnish
Instructions:
In a bowl, combine crushed Oreo cookies and melted butter
Mix well to form the crust
In serving glasses or jars, layer the Oreo crust at the bottom
Press it down firmly with the back of a spoon
In a large mixing bowl, beat cream cheese until smooth and creamy
Add powdered sugar, vanilla extract, lemon juice, and lemon zest to the cream cheese
Mix until well combined
Fold in whipped cream gently until the filling is smooth and fluffy
Spoon or pipe the lemon cheesecake filling over the Oreo crust in the glasses
Repeat the layers with remaining Oreo crust and lemon cheesecake filling
Chill the parfaits in the refrigerator for at least 2 hours to set
Before serving, garnish with lemon slices and a sprinkle of additional Oreo crumbs
