Avocado Bean Salad with Fresh Herbs

This avocado bean salad is light and flavorful, thanks to the fresh herbs and sour lime juice. This keto-friendly dish is healthy and filling, and its great for a light lunch or as a side dish for dinner.

Ingredients:

  • 2 ripe avocados, diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

In a large bowl, combine diced avocados, black beans, cherry tomatoes, red onion, cilantro, and parsley

Drizzle lime juice and olive oil over the salad

Gently toss to combine all ingredients

Season with salt and pepper to taste

Serve immediately or chill in the refrigerator for 30 minutes before serving
