This Ultimate Vegan Buddha Bowl is packed with nutrients and flavors, providing a balanced and satisfying meal. Its a perfect combination of quinoa, roasted sweet potatoes, steamed broccoli, kale, avocado, and almonds, topped with a creamy tahini dressing and hummus.

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup roasted sweet potatoes, cubed
  • 1 cup steamed broccoli florets
  • 1 cup shredded kale
  • 1/2 cup sliced avocado
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup hummus
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 2 tbsp soy sauce or tamari
  • 1 tbsp maple syrup
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

In a small bowl, whisk together tahini, lemon juice, soy sauce, maple syrup, garlic, salt, and pepper to make the dressing

Divide cooked quinoa, roasted sweet potatoes, steamed broccoli, shredded kale, avocado slices, and toasted almonds evenly among two bowls
