Cool off this summer with these refreshing and fruity Strawberry Mango Popsicles Made with fresh strawberries, ripe mangoes, and creamy coconut milk, these popsicles are a delightful treat for both kids and adults.
Ingredients:
- 1 cup chopped strawberries
- 1 cup chopped mangoes
- 1/4 cup honey or maple syrup
- 1/2 cup coconut milk
Instructions:
In a blender, puree the chopped strawberries with half of the honey or maple syrup until smooth
Pour the strawberry puree into popsicle molds, filling each about one-third of the way
Place in the freezer for 15-20 minutes to slightly set
In the same blender no need to rinse, puree the chopped mangoes with the remaining honey or maple syrup and coconut milk until smooth
Carefully pour the mango mixture on top of the partially set strawberry layer in the popsicle molds, filling them almost to the top
Insert popsicle sticks into the molds and freeze for at least 4 hours, or until completely solid
To unmold, run the popsicle molds under warm water for a few seconds to loosen the popsicles
