BLT and Potato Chip Lobster Rolls with Peach Salsa

This BLT and Potato Chip Lobster Roll with Peach Salsa recipe combines the succulent taste of lobster with the classic flavors of a BLT sandwich and adds a unique crunch with potato chips. The sweet and tangy peach salsa adds a refreshing twist to this delicious seafood roll.

Ingredients:

  • 4 lobster tails, cooked and chopped
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup potato chips, crushed
  • 1 cup diced peaches
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 4 brioche hot dog rolls
  • 8 slices bacon, cooked crispy
  • 2 cups lettuce leaves
  • 2 large tomatoes, sliced

Instructions:

In a large bowl, combine the chopped lobster tails, mayonnaise, sour cream, and crushed potato chips

Mix well

In another bowl, combine the diced peaches, diced red onion, chopped cilantro, and season with salt and pepper

Mix to make the peach salsa

Cut the brioche hot dog rolls in half and lightly toast them

To assemble, place a lettuce leaf on each toasted roll, followed by a slice of tomato, 1/4 of the lobster mixture, 2 slices of bacon, and a generous spoonful of peach salsa

Serve immediately and enjoy
