Ingredients:
- 12 cups popped popcorn
- 1 cup almonds, chopped
- 1 cup white chocolate chips
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1/4 cup light corn syrup
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
Instructions:
Set oven temperature to 250F 120C
Popcorn and chopped almonds should be combined in a large mixing bowl
Melt butter in a saucepan over a medium heat
Add salt, sugar, and corn syrup and stir
After bringing to a boil, cook for four to five minutes without stirring
Take off the heat and thoroughly mix in the baking soda and vanilla extract
Coat popcorn and almonds evenly by gently tossing in the caramel mixture
Transfer popcorn mixture onto a parchment paper-lined baking sheet
Bake for 45 minutes in a preheated oven, stirring every 15 minutes
Take out of the oven and allow to cool down fully
Melt white chocolate chips in 30-second increments in a microwave-safe bowl, stirring in between, until smooth
Pour melted white chocolate over the caramel corn that has cooled
Let chocolate solidify before cutting
