A hearty and tasty dish called Vegan Bread Upma is made with pieces of bread sauted with spices and vegetables. People in South India love this easy-to-make breakfast dish. Its great for a quick and filling meal.
Ingredients:
- 4 slices of vegan bread, cut into small pieces
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/2 inch ginger, finely chopped
- 1 tomato, finely chopped
- 1/2 cup green peas
- 1/2 cup chopped carrots
- 1/2 cup chopped bell peppers any color
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
Heat oil in a pan and add mustard seeds
Allow them to splutter
Add cumin seeds, onions, green chilies, and ginger
Saut until onions turn translucent
Add tomatoes and cook until they soften
Add green peas, carrots, and bell peppers
Cook for a few minutes until vegetables are tender
Add turmeric powder, red chili powder, coriander powder, and salt
Mix well
Add the bread pieces and toss gently until they are coated with the masala
Cover and cook for 2-3 minutes, stirring occasionally, until the bread absorbs the flavors
Garnish with fresh coriander leaves and serve hot
