Ingredients:
- 2 ripe bananas, mashed
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- 1 cup milk
- 1 egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Cooking spray or additional butter for cooking
Instructions:
In a large mixing bowl, combine the mashed bananas, milk, egg, melted butter, and vanilla extract
Mix until well combined
In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients and mix until just combined
Be careful not to overmix; some lumps are okay
Gently fold in the chocolate chips into the pancake batter
Preheat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter
Pour 1/4 cup portions of the pancake batter onto the skillet for each pancake
Cook until you see bubbles forming on the surface, then flip the pancakes and cook for another 1-2 minutes, or until they are golden brown and cooked through
Remove the pancakes from the skillet and keep them warm while you cook the remaining batter
Serve the Banana Chocolate Chip Pancakes with your favorite toppings, such as maple syrup, additional chocolate chips, or sliced bananas
