Triple Chocolate Zucchini Muffins

These Triple Chocolate Zucchini Muffins are a delightful treat that combines the goodness of zucchini with the richness of three types of chocolate chips. They are moist, chocolatey, and perfect for a sweet indulgence.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups grated zucchini about 1 medium zucchini
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup white chocolate chips

Instructions:

Warm your oven up to 350 F 175C and put paper liners in a muffin tin

Mix the cocoa powder, baking powder, baking soda, and salt in a medium-sized bowl with a whisk

Melt the butter and mix it with the white sugar and brown sugar in a different large bowl until everything is well mixed

Add the eggs and vanilla extract and beat until the mixture gets smooth

As you mix, add the grated zucchini

Slowly add the dry ingredients to the wet mixture and mix them in until they are just combined

Mix the milk, semi-sweet, and white chocolate chips in slowly

Fill up about two thirds of the way to the top of each muffin cup with batter

After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean

Take the muffins out of the oven and let them cool in the pan for a few minutes

Then, move them to a wire rack to cool completely
