Ingredients:
- 2 large zucchinis, thinly sliced lengthwise
- 1 pound ground beef
- 1 cup marinara sauce sugar-free
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
Preheat the oven to 375F 190C
In a skillet, cook the ground beef over medium heat until browned
Drain excess fat
Stir in the marinara sauce and season with garlic powder, onion powder, dried oregano, salt, and pepper
Simmer for 5 minutes
In a baking dish, layer zucchini slices to cover the bottom
Spread half of the meat sauce over the zucchini layer
Drop spoonfuls of ricotta cheese on top of the meat sauce layer, then sprinkle with mozzarella cheese
Repeat the layers: zucchini slices, meat sauce, ricotta cheese, and mozzarella cheese
Top with grated Parmesan cheese
Cover the baking dish with foil and bake for 25 minutes
Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown
Let it cool for a few minutes before serving
